Offline Training - Differences From Day To Day

My son (who is almost 10) has flown some arcade style flight games, but wants to fly a more realistic sim.  I set up WWIIOL on his computer, and put together a control system for him (joystick, keypad, mouse for "free look") which works great.  I fired up offline training for him and he did some taxi tests then gradually built up his speed until he could take off and fly.  I had him spawn in a Hawk, as they're among the easiest to fly, from what I can tell.  The first day, it was smooth as silk.  He even managed one landing without any damage, with no coaching or help from me.  The second day, it was all over the place, 100% different.  The plane would roll immediately upon leaving the ground.  It would flop around in the air, all over the place at the slightest rudder input.  It was everything I could do for ME to keep it in the air and I've flown in realistic flight sims quite a bit, have practiced quite a bit in offline mode, and have flown missions ingame.

Has anyone else experienced this big change, from one session to the next?

for some reason with my most recent X52 Pro, every time i load the game and the first time i spawn anything that needs to use the joystick I need to move the JS through its full range of motions. If i don't, the sensitivity level is way high and things like what you're mention happens. But if i remember to move it around in a full circle, it clears it right up and then it flies like normal.
